When one thinks of Turkey or Turks, one is reminded of rakı. The history of rakı does not go as far back as wine or beer, but rakı has become the traditional Turkish drink. Rakı is made from different fruits in different regions, but mostly grapes, figs and plums. Rakı is known as aslan sütü : “the milk of lions’”. This may be because it is a clear alcohol that turns milky white when water is added, or maybe because it is often seen as a sign of manhood as it is consumed by the lions of the land. Nevertheless, it is a favorite drink in Izmir restaurants since the best meze “appetizers” that can accompany this drink are seafood specialties and Izmir is renown for its seafood.
 So, “rakı-balık” is a definite must in this city.

There are also excellent choices in Turkish beers and wines that should definitely be tried.
Non-alcoholic beverages such as ayran “ a buttermilk drink made with yoghurt”,  maden suyu, “mineral water”, and  meyva suyu “fruit juice” etc are available.
